Jerk chicken! Who doesn’t like Jerk Chicken?
This is a great little camping recipe because it’s simple to prepare and you can serve almost anything you want as a side dish. I like to have this recipe made ahead of time. I usually let it soak up the marinade for two nights, then I label a freezer bag with the name and date of the recipe, then place that bag inside a regular storage bag and freeze it.
I will usually prepare two or three different recipes this way so that when go camping, we have one or two days of easy meals without having to get any pots or pans dirty. I just light the BBQ, get out the paper plates, open up the pre-made potato salad and enjoy family time. 🙂
All right, here is that recipe I promised to you guys.
Ingredients: (serves 4)
4 tbsp soy sauce
4 tbsp Worcestershire sauce
4 tbsp brown sauce
2 onions, grated
1 fresh green chilli (deseeded), finely chopped
garlic (2x cloves), crushed
1 tbsp brown sugar
1 tbsp fresh thyme, finely chopped
1 tsp black pepper
4 chicken breasts
Mix all the ingredients, except for the chicken, together in a bowl
Make slashes across the chicken pieces to allow the flavors of the marinade to soak in, then cover the meat with the marinade and place it in the fridge (or ice chest, if you’re camping).
***For Best results, Let it marinate for as long as possible…preferably overnight!!***
When you’re ready to cook, place the chicken on the BBQ and cook evenly until done, usually around 20 minutes while turning it regularly
Check the meat is cooked in the middle by inserting a skewer or fork into it (or better yet a remote thermometer, so you don’t have to let out the juices) –
Once it’s done, it’s time to serve the chicken with salad or rice
